Easter prep, gym, cooking and a flat tyre…

Had a good week. Was invited to a family meal 🥘 . It was a lovingly home cooked Spanish tapas and absolutely delicious. We had bruschetta (as photo), meat balls, tortilla, olives, veggies, canary potatoes, prawns and manchego cheese. The pud was homemade brownie with ice cream and was absolutely amazing. The beer was Punk IPA by BrewDog which is my all time favourite beer, at the moment. Must say, tapas is a great way to entertain because you can pick what you like which, in my case, is most of it. Oops.

Been to the gym three times and been on a couple of walks. Tried to go on about 1200 calories and some days have been ok but others, as above, not great. However, feel more in control as not stuffing chocs and biscuits so feel a lot better. With Easter Sunday looming this is my main aim. Upwards and onwards. Really aiming to start properly after Easter.

On Saturday, did the booze and bits top up shopping and discovered a flat tyre when we returned to our car. Luckily, handy husband was with me and put the spare tyre on. This seemed to fascinate the local shopping population. Looked a fairly simple operation but I probably wouldn’t have the strength for the nuts. We then had to rush to the tyre shop and the man insisted I stayed in the car, like lady muck, while he jacked the car up! So I carried on nonchalantly writing this blog post! All part of life’s rich tapestry! Can you change a tyre?

Tomorrow is Easter Sunday and I’m looking forward to a jolly family day of roast lamb and all the trimmings including homemade Yorkshire puddings, chocolate pudding and cake. Then I’m back on the running, gym and healthy diet routine. I promise.

The obligatory Easter chocolate cake is a simple affair…

8oz marg

8oz caster sugar

8oz self raising flour

4 eggs

Chocolate drops

Splash of treacle and or milk (makes it fudgy and yummy)

2 oz Chocolate powder

Mix together and put into two 8 inch tins.

Icing is 2oz butter with around 3oz icing sugar and 1oz chocolate powder. Mix with a tiny drop of boiling water. To be honest, you don’t have to be too careful about measurements for the icing.

Enjoy and have a wonderful Easter.

Mini Quiches

What shall I have for lunch that will fill me up? Eggs are always filling and I have a new small cake tin tray. So I made some mini quiches and they are delicious, cheap and filling.

Beat some eggs in a bowl.  Chop a pepper, onion, mushrooms and add ground pepper and herbs.  Of course, you could add some chopped veg too.  Plop in the individual cake tins and fill with the egg mixture.  Pop in the oven and wait for about 10 mins.  Sprinkle some grated cheese on and pop back in.  Delicious, healthy, filling and super easy.  Enjoy with some salad.

Stuff you need:

About 4 eggs

Half a pepper

Onion

Mushrooms

Seasoning

2 oz mature cheese

and anything else you fancy adding.

Day 1 – #HealthyAugust

Made a delicious courgette salad to pack up for work lunches.  The idea is to have some super healthy lunches so I don’t have to eat beyond satiety (onions, courgettes, potatoes aubergines, herbs).  Really aiming to eat well this month.

After work, I went to the gym which was fine but hot. Feel a bit lacklustre about going to the gym, so may participate in a few classes but will continue to run and walk too.  This is unusual for me and suspect it is because of the warm weather.

Also, I went for a short twenty minute walk at lunch time today and decided I should make more of an effort and go out during my break.  It is good to get away from the computer screen.

For the first day, I’m pleased and enthusiastic. Of course, it is hard to keep the enthusiasm going but I’m feeling positive…

Proposed Healthy Month Plan – August

After a family wedding and subsequent holiday, everything is now back to the old routine.

This means a serious plan to get back to a healthy diet and exercise plan.  The plan is to do a series of healthy months and call the idea Healthy Month (probably one in four months). Therefore, the first one will be Healthy Month – August.  Or #HealthyAugust.

The plan is:

Eat healthy meals with a focus on fresh vegetables and fruit.

Low alcohol consumption.

Exercise almost daily.

Blog, Facebook or tweet about progress.

My goal is to lose 2 lb a week which is quite a challenge for me.  It seems a good month to do the above, but I am aware there may be the odd outing when I will succumb to some booze or naughty food.  However, I plan to be strict.  Anybody want to comment on the idea? Food for thought…

 

I am not a nutritionist, but like researching new diets and understanding how people eat. The problem is that we, as a modern community, like fatty food and sugar. But, our bodies do not. With copious amounts of healthy food (veggies/fruit) and exercise, it is fabulous to feel invigorated and happy.

However, it is very difficult to do this isn’t it? The answer is to almost cut out sugar and bad carbs such as white bread, red meat, chocolate (although partial to some dark chocolate) for most of the time.

What seems to work is to eat when hungry.  Devour lots of fresh vegetables, pulses, fish and chicken and the odd fillet steak and pint of beer for a treat.  Stop eating when nearly full and only eat when hungry.  Tricky with a family, but focus on the outcome and try the best you can.

Some people think eating a healthy diet is synonymous with being boring.  This is ostensibly a blocking method and not facing reality.  The food you eat does not have to be tasteless, in fact, far from it.  What can be tasteless is the same tedious meat and chips dinner, week after week.  Look on YouTube for inspiration and cook away.

This week’s lunches are pasta with chicken, vegetables or a boiled egg.  All packed up again.  This really stops the hunger and helps with the afternoon munches.  My other piece of wisdom is this.  Don’t follow recipes just go with the flow.  Do some research for creativity and vision, then go for it!

Chicken/Egg Pasta Lunch

Pasta, olive oil, ground pepper, herbs, lemon juice with veggies (onions, broccoli, mushrooms, spinach, pepper)
